Food & Art: Gran Exposicion del Pintor Argentino Ricardo Celma (II Parte)

La exposicion fue todo un exito! Nunca antes vi tantas obras de nuestro pintor favorito juntas. Aun tengo esa vision en mi mente, plasmada, con toda la energia efervescente: un volcan de emociones conjugadas..., contenidas, sin compasion mostrando un realismo exquisito. El romance, la pasion, un tributo a la obra maestra perfecta: el cuerpo humano. Un poema silente en cada una de ellas, el silencio delirante y estremecedor de los grandes maestros de la pintura conjugados en uno solo.

"Unsaturated fatty acids are important constituents of neuronal cell membranes and have neuroprotective, antioxidant, and anti-inflammatory properties."

That's how researchers at the Erasmus Medical Center in Rotterdam, The Netherlands, describe the background for their study that appears in a June issue of the journal Neurology. Their objective: determine the possible protection that an intake of unsaturated fatty acids might have on Parkinson's disease risk.

The Erasmus team used data collected from the Rotterdam Study, an ongoing research project in which dietary and medical records for more than 10,000 male and female subjects over the age of 55 are followed to investigate risk factors for chronic diseases. For the Parkinson's study, nearly 5,300 subjects were selected. At the outset of the study, all were free of dementia or Parkinson's, and each subject underwent a complete dietary assessment. Subjects were monitored for an average period of six years.

At the conclusion of the follow up period, 51 subjects had been diagnosed with Parkinson's. The data revealed a significant link between a reduced risk of Parkinson's and the highest intake of total fat, monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs).

One of the primary forms of PUFAs is very familiar to HSI members: omega-3, mostly available through fish, fish oils and grass-fed beef. MUFAs are found in olive oil, avocados, nuts and seeds.

Without question, a diet that includes a high intake of MUFAs and PUFAs offers a wide range of health benefits. But increasing your intake of these unsaturated fatty acids is not the only way to reduce Parkinson's disease risk.

In the e-Alert "Elevated Homocysteine..." (3/6/02), I told you about research from the National Institute on Aging that found "the first direct evidence" that elevated homocysteine levels increase the risk of Parkinson's.

The same research team found that homocysteine makes human brain cells more susceptible to the deadly affects of toxins like iron and the pesticide rotenone, which are known to cause some cases of Parkinson's disease. In laboratory tests using human tissues, homocysteine "significantly enhanced [cell death] induced by rotenone and iron."

As we've seen in previous e-Alerts, elevated levels of the amino acid homocysteine have been linked with atherosclerosis as well as Alzheimer's disease and other forms of dementia. Considerable research has also demonstrated that foods and supplements rich in vitamins B-6, B-12, and folic acid may help reduce homocysteine levels.

Most people who raise their dietary folate intake - by eating asparagus, lentils, chickpeas, cantaloupe, watermelon, wheat germ, most varieties of beans, and especially spinach and other leafy green vegetables - respond with a lower homocysteine reading. But if the diet doesn't do the trick, vitamin supplements often will.

Me apasiona la pintura tanto como la cocina, al final, las dos son expresiones de arte y nosotros los artistas! Ricardo Celma es un excepcional artista argentino, super dotado de la pintura, con un don que yo catalogo como divino. Su obra expresa su pasion por la vida y su epoca, el amor apasionado sin olvidarse de lo que significa una ingenuidad pura e intacta. 

Desde inicios del 2004 me inicie como fiel admiradora de Celma. Pero es que con solo una vez que vi una de sus pinturas...quede extasiada.

Ahora, como un tributo a nuestro pintor favorito...

In the beginning-the eternal battle

Greetings from Panama! after receiving this poem from a friend a few days ago I thought it is so true and funny at the same time, that I have to share it with you.

Although I do not know the name of the author, I will give him/her full credit for it :)

In the beginning, God created the Heavens and the
Earth and populated the Earth with broccoli,
cauliflower, and spinach, green and yellow and red
vegetables of all kinds, so Man and Woman would
live long and healthy lives.

Then, using God's great gifts, Satan created Ben and
Jerry's Ice Cream and Krispy Kreme Donuts. And Satan
said, "You want chocolate with that?"

And Man said, "Yes!" and Woman said, "and as long as
you're at it, add some sprinkles." And they gained 10
pounds. And Satan smiled.

And God created the healthful yogurt that Woman might
keep the figure that Man found so fair. And Satan
brought forth white flour from the wheat, and sugar
from the cane and combined them. And Woman went from
size 6 to size 14.

So God said, "Try my fresh green salad." And Satan
presented Thousand-Island dressing, buttery croutons
and garlic toast on the side. And Man and Woman
unfastened their belts following the repast.

God then said, "I have sent you heart-healthy
vegetables and olive oil in which to cook them." And
Satan brought forth deep-fried fish and chicken-fried
steak so big it needed its own platter. And Man
gained more weight and his cholesterol went through
the roof.

God then created a light, fluffy white cake, named it
"Angel Food Cake," and said, "It is good." Satan then
created chocolate cake and named it "Devil's Food."

God then brought forth running shoes so that His
children might lose those extra pounds. And Satan gave
cable TV with a remote control so Man would not have
to toil changing the channels. And Man and Woman
laughed and cried before the flickering blue light and
gained pounds.

Then God brought forth the potato, naturally low in
fat and brimming with nutrition. And Satan peeled off
the healthful skin and sliced the starchy center into
chips and deep-fried them. And Man gained pounds.

God then gave lean beef so that Man might consume
fewer  calories and still satisfy his appetite. And Satan
created McDonald's and its $ .99 double cheeseburger.
Then said, "You want fries with that?" And Man
replied, "Yes! And super-size them!" And Satan said,
"It is good."

And Man went into cardiac arrest.

God sighed and created quadruple-bypass surgery.
Then Satan created HMOs

Delicious Memories: The Oriental Thai Cooking School

I LOVE Thailand! Every day in Thailand was a dream. From the cooking, to the temples, the shopping, beaches, marvelous history, people and landscape. I love it all :) Hope to go back there soon...

In 2002 I had the privilege to take an intensive Thai cooking and culture program at the Oriental Hotel Cooking School in Bangkok. Wow...it was a blast. Expensive, ...yes, but a great investment too if you like to cook as a hobby, or cook professionally.  I remember I met many restaurant owners, chefs and people that love to cook. We had so much fun, that is very important!

The next photos were taken in April 2002 when the cooking program took place.

I was always the first one to arrive at the classroom :)

Vintage: MILK WEED CREAM

This is one of my favorite vintage ads...The fact is that MILK is the perfect food for Us -humans-, it is also a wonderful ingredient for beauty creams and lotions. 

Being a Professional Chef, I have used milk, cream and butter  every day. But I never learned the complete story with facts about -milk-. Now, after reading many books about nutrition, and one of my favorites: The Milk Book - The Milk Of Human Kindness Is Not Pasteurized- by William Campbell Douglass II, MD. I understand. Now I do.

"The Milk Book - How Science Is Destroying Nature's Neatly Perfect Food. Children are denied whole milk because pediatricians are obsessed with the cholesterol myth. These same gutless wonders don't say anything about children drinking half-a-dozen bottles of Coca-Cola a day, stating before breakfast! But kids can't get a decent glass of milk. Adding vitamin D to milk is a risky business. The New England Journal of Medicine reported many cases of vitamin D intoxication resulting from excessive fortification of commercial milk. Today, you can't get a decent glass of milk. Even if you buy whole milk, thinking it is better than that sickly blue stuff called skim, you can't win, because all of the commercial milk is homogenized. I am convinced that homogenization is even more detrimental to the nutritional quality of milk than the heat processing called pasteurization."
